It’s a longstanding tradition in Wisconsin around the holidays; you may know it as steak tartare or a cannibal sandwich but like most years, there’s a warning that comes with consuming the raw meat appetizer.
Registered Dietician with Froedtert Hospital Amy Kulwicki says because the meat is not cooked, there are some risks to assume.
“You know, I think this comes up every time people talk about the raw beef and onions simply because, as it states “raw beef,” it’s not cooked. And when the meat isn’t cooked there’s a higher risk to harmful bacteria that are normally cooked off in that process. So something like salmonella, E. coli, even listeria to name a few, can put you at risk for some pretty significant illnesses,” said Kulwicki.
