Giving the gift of chocolate candy- is a Christmas gift that no one I know would pass up. Here is a really simple recipe for chocolate truffles. You can make them as fancy or plain as you’d like; it all just depends on what you want to coat them with. I like toffee pieces, pecans, cocoa powder, coconut- the options are endless.
INGREDIENTS:
-14 oz. (1 3/4 cups) bittersweet chocolate nibs (or chocolate chips)
-6 tbsp. unsalted butter
-1/3 cup heavy cream
-1 tbsp. light corn syrup
-1/3 cup Dutch processed cocoa powder
(Plus, any ingredients you’d like to roll your truffles in. Example: cocoa powder, pecan pieces, toffee bits, crushed chocolate candies, crushed Oreos, coconut, etc.)
DIRECTIONS:
- Pour heavy cream into small sauce pan and bring to a simmer. Cut up butter into small pieces and add to the cream. Stir until melted. Add in the corn syrup. Then, add your chocolate and stir until smooth. Pour into a bowl.
- Allow the mixture to cool, then cover and put in the fridge until the chocolate mix is firm. This will take about 2 hours.
- Then remove from the fridge and place on the counter. Use a spoon and roll pieces into 1 inch balls.
- Decide what you’d like to roll your truffles in. For plain chocolate truffles, roll in some Dutch cocoa powder. You can get creative and do Christmas colors with colored sugar or sprinkles too.
